I was looking thru my stash of patterns yesterday trying to find some things to do in Christmas colors. The holiday is coming fast! I know what you mean about toooooo many projects. I have about 4 started now. Back the last year or so I had so many I made a pack with myself to not start something new until I had cleared two in progress items out of the basket. That helped a lot.
